I made gluten-free peanut butter cookies! the recipe was found in (this book)

it’s super easy:

1 cup brown sugar

1 cup smooth peanut butter

1 egg

Preheat to 350*. Mix ingredients until blended and smooth. Roll dough into 1.5 inch balls on cookie sheet. flatten dough with fork (to get the criss cross shape) Bake 10-12 minutes until set (I found that this means until they don’t collapse when you poke them.)

so yeah, I hope you enjoy them as much as I do! My dog even liked the one I accidentally dropped on the floor. :)
